The grain (mostly malted barley) is crushed between steel rollers. The handling of grain produces dust, so the mill room is generally isolated from the rest of the brewery. The mill is adjusted to crush the grain, but not pulverize it, and not to do excessive damage to the grain hulls. Pulverized grain and hulls give processing problems, especially during wort separation.
